One of my favorite desserts is Sweet Potato Pie. However, I didn’t feel like waiting for an hour for it to cook and then cool. So, I decided to make a few Sweet Potato Pies and fry them. OMG!!! I had to talk myself out of eating them all.

They are rich in flavor, light, soft, yet crispy. Make them, and let us know what you think!

Fried Sweet Potato Pies

Equipment

  • Blender or Food Processor
  • Medium or Large Bowl
  • parchment paper
  • Medium Pan or Pot
  • Flat surface or Cutting Board
  • Rolling Pin optional

Ingredients
  

  • 1 cup Sesame Seed Oil or Vegetable Oil

For The Dough

  • 1 cup All Purpose Flour + 2 more tbsps
  • 1/4 cup Plant-Based Butter Cold
  • 3-4 tbsp Ice Cold Water
  • 1 tbsp Maple Syrup
  • 1/2 tsp Salt

For The Filling

  • 1 can Yams
  • 1/2 cup Canned Coconut Milk
  • 1 cup Light Brown Sugar
  • 1/4 cup Cornstarch
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1/2 tsp Nutmeg
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Ground Ginger

Instructions
 

Make the Dough

  • In a medium bowl, add the flour, plant-based butter, syrup (or sugar), salt, and water. Mix until ingredients are combined and a dough is formed. Add flour to reduce the moisture of the dough.
    1 cup All Purpose Flour, 1/4 cup Plant-Based Butter, 3-4 tbsp Ice Cold Water, 1 tbsp Maple Syrup, 1/2 tsp Salt
  • Transfer the dough onto a floured flat surface or cutting board and knead the dough until for 3-5 minutes.
  • Cut the dough into 4 parts and form them into ball shapes.
  • Flatten the dough ball with your hands or rolling pin to make the dough 1/4 inch thick.
  • Use a 5-6 inch diameter cylinder, bowl, or cup and press the rim into the dough to make a circle flat dough. Reuse the excess dough to form another circle flat dough.
  • Repeat this process until all of the dough has been formed.
  • place each piece of dough on parchment paper and place in the refrigerator to chill.

Make the Filling

  • In a blender or food processor, add the yams, coconut milk, light brown sugar, cornstarch, vanilla extract, cinnamon, salt, nutmeg, ground cloves, and ground ginger.
    1 can Yams, 1/2 cup Canned Coconut Milk, 1 cup Light Brown Sugar, 1/4 cup Cornstarch, 1 tsp Vanilla Extract, 1 tsp Ground Cinnamon, 1/2 tsp Salt, 1/2 tsp Nutmeg, 1/4 tsp Ground Cloves, 1/4 tsp Ground Ginger
  • Blend the ingredients until they are smooth or your desired texture.

Make the Pies

  • Take the dough out of the refrigerator.
  • On each dough, add 1 teaspoon of the sweet potato puree in the center, leaving at least 1/2 inch perimeter clear.
  • Take one side of the dough and fold it over to the other side of the dough to form the pie. Use your fingers or a fork to press down on the edges of the dough to seal the pie on the ends. Set it aside when formed.
  • Repeat the process until all of the dough is used and pies are formed.

Fry the Pies

  • In a medium pan or pot, add the oil and heat on medium heat. (put a few pieces of flour in the oil to see if it bubbles and ready for frying)
    1 cup Sesame Seed Oil or Vegetable Oil
  • When the oil is hot and ready for frying, place 1 or 2 pies in the oil to fry.
  • Fry until golden brown. Flip the pies if necessary to ensure both sides are cooked.
  • Once golden brown, remove the pie(s) from the oil and place them on a plate with a paper towel to absorb the oil.
  • Repeat this process until all of the pies are fried.
  • Let the pies cool for a few minutes so that you don't burn your tongue. 😉
