As much as I love #Crab everything, I didn’t appreciate the deliciousness of Maryland Crab Soup until later in life. Now, every now and then, I crave it.

When I order it from a restaurant, it is so freakin expensive. And I understand why. The price of Crabs has gone up so much it is almost like they are pricing their soup to prevent us from ordering it. I know that’s not the case, but sometimes I want Real Crab Soup on an Imitation Crab budget.

I decided to take my popular Vegetable Soup and turn it into this Delish Maryland Crab Soup. It is simple and it won’t break your budget. Well, the crab might, but it will be worth it! I promise.

Maryland Crab Soup

Ingredients
  

  • 2 tbsp butter or olive oil
  • 1 medium onion diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • .5 medium cabbage chopped
  • 1 can diced potatoes (or dice 2 medium potatoes)
  • 4 cups vegetable broth
  • 1 can crushed tomatoes
  • 1 can diced tomatoes (with or without jalapenos)
  • 1.5 cups frozen mixed vegetables
  • 1 cup crab meat (special, fin, or lump)
  • 1 tsp salt
  • .5 tsp pepper
  • 1 tsp Old Bay seasoning (or preferred seafood seasoning)

Instructions
 

  • In a large pot on medium heat, add butter or oil and let simmer.

  • Add the onions and celery. Stir and let simmer until celery is tender and onions are translucent for about 7 to 10 minutes.

  • Add the garlic and stir to mix. Stir continuously and let simmer for about 1 minute.

  • Add vegetable broth, crushed tomatoes, diced tomatoes, potatoes, frozen vegetables, and frozen mixed vegetables. Stir to mix. Stir occassionally until mixture comes to a low simmer for about 10 minutes.

  • Add crab meat and stir to combine mixture. Stir occassionallyand let simmer for 15 to 20 minutes on medium to medium-low heat.
    1 cup crab meat
  • Add salt, pepper, and Old Bay seasoning to taste. Add other desired seasonings to tasts.
    1 tsp salt, .5 tsp pepper, 1 tsp Old Bay seasoning
  • Add more broth or water to loosen the texture if necessary or desired.
  • Scoop a serving in your favorite soup bowl and enjoy!
