I missed a few days, but this is day 24, and this is what I made that was so delish!!! But first…

THE GOOD: 

  • I did a test kitchen today with a new recipe that came out great.
  • I’m starting to like the rainbow peppers (green, red, yellow), especially in my egg scramble.
  • Nutritional Yeast is magic!

THE BAD:

  • The first stab at making a cheese sauce was an epic fail. Lesson: Original and Unsweetened Almond Milk are NOT the same, especially in a non-dairy cheese sauce.

THE “I’M NOT A VEGAN BUT DAYUM!”:

I have been craving Potatoes Au Gratin but have only made it out of the box. Since that’s not going to happen, I found a Vegan version (non-dairy).

After the epic failure of the first try of the sauce, I tried it again with coconut milk (the only other plant-based milk I had).

I added the plant-based cheddar cheese to the sauce. Skeptical… I proceeded to make the dish.

S/N: I bought a Mandoline and had a ball slicing potatoes and onions. Hmmm, what else can I slice?… Other than my fingernail (the only casualty).

After it was cooked, it smelled and looked like potatoes au gratin.

BTW: I decided to fry some cauliflower.

Crossing my fork and knife … I tasted it, and OMG! I’m in love with myself. That cheese sauce is everything! I even dipped the cauliflower in it. No other sauce is needed.

I’m going to make that non-dairy cheese sauce again and put it on er’thang too!!!

I’m full, but I so want some more.
