Mushroom Cheesesteak

This Vegan and Dairy-Free Cheesesteak will have you doing the Foodie Happy Dance. Quick and easy to make.

Ingredients
  

  • 3.5 oz Shiitake Mushrooms, sliced (Or portabella mushrooms)
  • 1/2 green bell pepper, diced or sliced
  • 1/2 yellow bell pepper, diced or sliced
  • 1/2 orange bell pepper, diced or sliced
  • 1/2 onion, diced or sliced
  • 2 slices Vegan Provolone Cheese (or other vegan cheese slices)
  • 1 tbsp plant-based butter
  • 1/3 cup water
  • 2 tbsp vegetable oil (or olive oil)
  • 1 tsp Beef(less) Bouillon Powder
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce (Vegan option if available)
  • 1/8 tbsp liquid smoke
  • 1 tsp maple syrup
  • 1 tsp red pepper flakes (optional)
  • 1 tbsp plant-based butter
  • 2 steak rolls (vegan option if available)
  • Vegan Mayo (optional)
  • Ketchup (optional)
  • Jalapeno Peppers, sliced (optional)

Instructions
 

Marinade The Mushrooms

  • Add the water, oil, soy sauce, Worcestershire sauce, liquid smoke, beef(less) bouillon powder, maple syrup, and (optional) red pepper flakes in a bowl. Stir ingredients to combine.
    1/3 cup water, 2 tbsp vegetable oil, 1 tsp Beef(less) Bouillon Powder, 2 tbsp soy sauce, 1 tbsp Worcestershire sauce, 1/8 tbsp liquid smoke, 1 tsp maple syrup, 1 tsp red pepper flakes
  • Add the mushrooms to the bowl with the marinade. Stir and make sure the mushrooms are coated with the marinade.
    3.5 oz Shiitake Mushrooms, sliced
  • Let the mushrooms sit in the marinade for 5 - 10 minutes.

Cook The Mushrooms

  • Add 1 tbsp of plant-based butter to a pan on medium heat to melt.

  • Add onions, peppers, and marinated mushrooms to the pan.
    1/2 green bell pepper, diced or sliced, 1/2 yellow bell pepper, diced or sliced, 1/2 orange bell pepper, diced or sliced, 1/2 onion, diced or sliced
  • Saute the mushrooms and vegetables for 3 to 5 minutes, until the mushrooms are cooked.
    1 tbsp plant-based butter
  • Turn the heat down to medium low and add the cheese on top of the mushroom and vegetables. Cover the pan so that the steam helps to melt the cheese.
    2 slices Vegan Provolone Cheese

Assemble The Cheesesteak

  • In a separate pan, add 1 tbsp of plant-based butter on medium heat to melt.
  • Open the steak buns and lay the insides of the buns on the buttered pan.
    2 steak rolls
  • Fry until the breads are lightly toasted.
  • Place the toasted steak bread on a plate.
  • Scoop the Mushroom Cheesesteak on the toasted inside of the steak bread.
  • Add optional ingredients to taste (optional)
    Vegan Mayo, Ketchup, Jalapeno Peppers, sliced
