Cauliflower Tots.

This is a tasty alternative for the classic tater tots by Jen St. Jean.

Ingredients
  

  • 1 head cauliflower (you can also buy cauliflower crumbles at the store)
  • 2 eggs
  • 8 tbsp Parmesan cheese
  • Season with your heart (use your desired seasoning)
  • Pam butter spray (or other oil spray or butter the baking sheet.)

Instructions
 

  • Preheat oven to 425
  • Pulsate a head of cauliflower in a blender or food processor, or use a cheese grater to create crumbles.

  • Microwave the cauliflower for 2 mins. Drain water. (Use a papertowel or dishtowel to squeeze out most of the liquid.
  • Combine the cauliflower, eggs, parmesan cheese, and seasoning in a bowl..
    2 eggs, 8 tbsp Parmesan cheese, Season with your heart
  • Use a spoon to scoop out about 2 tbsp and form the “tots”
  • Spray the baking pan generously with Oil Spray.

  • Bake for 18 mins

Notes

I sprinkled a little bit of Elote seasoning on top when they were done.
