Cauliflower Tots.
This is a tasty alternative for the classic tater tots by Jen St. Jean.
Ingredients
- 1 head cauliflower (you can also buy cauliflower crumbles at the store)
- 2 eggs
- 8 tbsp Parmesan cheese
- Season with your heart (use your desired seasoning)
- Pam butter spray (or other oil spray or butter the baking sheet.)
Instructions
- Preheat oven to 425
- Pulsate a head of cauliflower in a blender or food processor, or use a cheese grater to create crumbles.1 head cauliflower
- Microwave the cauliflower for 2 mins. Drain water. (Use a papertowel or dishtowel to squeeze out most of the liquid.
- Combine the cauliflower, eggs, parmesan cheese, and seasoning in a bowl..2 eggs, 8 tbsp Parmesan cheese, Season with your heart
- Use a spoon to scoop out about 2 tbsp and form the “tots”
- Spray the baking pan generously with Oil Spray.Pam butter spray
- Bake for 18 mins
Notes
I sprinkled a little bit of Elote seasoning on top when they were done.
