This Salsa Fresca, also known as pico de gallo recipe, is naturally vegan and gluten-free.

Pico de Gallo is a raw Mexican condiment that goes great on so many dishes. It adds a nice freshness and a boost of flavor to tacos, nachos, and so many other recipes, like my Hoppin Scambled Just Eggs.

Hoppin Salsa Fresco (Pico de Gallo)

A classic Mexican dish with a Twist. Bursting with flavor and can be enjoyed alone with some tortilla chips or added to your favorite dishes. Spicy or Mild, you will love this Pico de Gallo!

Ingredients
  

  • 4 Roma Tomatoes diced or chopped
  • 1 Jalapeno Pepper** diced or chopped
  • 1/2 Onion diced or chopped
  • 1/2 Green Bell Pepper* optional, diced or chopped
  • 1/2 Red Bell Pepper* optional, diced or chopped
  • 1/2 Orange Bell Pepper* optional, diced or chopped
  • 1/2 Yellow Bell Pepper* optional, diced or chopped
  • 1/2 Cucumber* optional, diced or chopped
  • 1/2 cup Fresh Cilantro chopped
  • 2 tbsp Lime Juice
  • 2 tsp Garlic minced
  • 1 tsp Cumin
  • 1/2 tsp Salt more to taste
  • Cracked Pepper to taste

Instructions
 

  • Dice or chop vegetables.
  • In a large bowl, add the onions, jalapenos*, bell peppers*, cucumber*, and lime juice. Stir to mix ingredients, and then let it sit for a few minutes.
    1 Jalapeno Pepper**, 1/2 Onion, 1/2 Green Bell Pepper*, 1/2 Red Bell Pepper*, 1/2 Orange Bell Pepper*, 1/2 Yellow Bell Pepper*, 2 tbsp Lime Juice, 1/2 Cucumber*
  • Add the tomatoes, garlic, cilantro, cumin, salt, and pepper. Stir to mix the ingredients.
    4 Roma Tomatoes, 1/2 cup Fresh Cilantro, 2 tsp Garlic, 1 tsp Cumin, 1/2 tsp Salt, Cracked Pepper
  • Add additional seasonings to taste.
  • Enjoy immediately or store in an air-tight jar or container in the refrigerator.

Notes

** To make this recipe Spicy, keep the seeds of the Jalapeno and put it in the salsa mix.
** To make this recipe Mild, remove and discard the seeds and core or the Jalapeno pepper.
* These vegetables are optional based on taste.
