Preheat your oven to 375°F.
To make the burger patties, combine all the ingredients in a food processor and blend until the mixture is smooth.
1 can black beans, 1/2 cup cooked brown rice, 1/4 cup bread crumbs, 1/4 cup chopped onion, 1/4 cup chopped green pepper, 1 tbsp soy sauce, 1/2 tsp garlic powder, Salt and pepper to taste
Divide the mixture into four equal portions and form each portion into a patty shape.
Place the patties on a baking sheet lined with parchment paper and bake in the oven for 20-25 minutes, flipping them over halfway through.
While the patties are cooking, make the special sauce by combining all the ingredients in a small bowl and mixing well.
1/4 cup of vegan/plant-based mayo, 2 tbsp of plant-based Thousand Island dressing, 1 tbsp of yellow mustard, 1 tbsp of finely chopped onion, 1 tbsp of sweet pickle relish
Toast the hamburger buns.

Assemble the burgers by placing a slice of vegan cheddar cheese on the bottom bun, followed by a cooked patty, a dollop of special sauce, shredded lettuce, sliced pickles, sliced onion, and another slice of vegan cheddar cheese.
